Honey Cinnamon Rollups

Equipment
- 1 15x12 inch piece of waxed paper
- 1 Pastry brush
- 1 Cutting knife
- 1 13x9 inch baking dish
- 1 Wire cooling rack
Ingredients
- 2 cups ground walnuts, toasted
- ¼ cup sugar
- 12 sheets frozen phyllo dough, thawed
- ½ cup butter
FOR THE SYRUP
- ½ cup Honey Bee Artisan's Wildflower Honey
- ½ cup sugar
- ½ cup water
- 1 tbsp. lemon juice
Instructions
- Preheat oven to 350 degrees.
- Combine walnuts, sugar and cinnamon, and set aside.
- Place 1 sheet of phyllo dough on a 15x12 inch piece of waxed paper and brush with butter. Place another phyllo sheet on top of it, and brush with butter. (Be sure to cover the remaining phyllo to prevent it from drying out). Sprinkle with 1/4 cup walnut mixture.
- Starting with the long side, roll up tightly like a jelly-roll, using the waxed paper to manipulate the dough, removing it as you roll. Slice roll into 4 even rolls and transfer rolls to a greased 13x9 inch baking dish.
- Repeat step 3 with the remaining phyllo dough and walnut mixture. Bake until light brown, 14-16 minutes. Remove from oven and let it cool.
- In a small saucepan, combine the syrup ingredients and bring to a boil. Reduce heat and simmer 5 minutes. Remove from heat and cool 10 minutes.
- Drizzle Cinnamon Honey Rolls with syrup, and sprinkle with remaining walnut mixture.

- Walnuts can be substituted with your favorite nut or combination of nuts, such as pecans, almonds, or pistachios.
- Instead of cinnamon, try other spices like cardamom, allspice, ginger, or pumpkin pie spice.
