Sourdough Brown Bread

Ingredients
  

  • 315 g warm water
  • 100 g active starter
  • 80 g Honey Bee Artisans honey
  • 80 g brown sugar
  • 40 g molasses
  • 2 eggs
  • 8 g cocoa powder
  • 5 g salt
  • 250 g fresh milled khorasan wheat flour
  • 400 g bread flour

Instructions
 

  • Mix liquids with flour and let sit for 30 min. Mix all the rest of the ingredients together and knead in stand mixer until dough comes together and is stretchy and smooth. This is a wet dough and will need additional bread flour.
  • Let rise until doubled, separate into two and shape to go into greased loaf pans. Top with whole oats(optional). Cover and let rise until even with top rim of loaf pan. Bake at 350° for 25-35 minutes (depending on your oven)
  • When done pull out and rub top with butter.
  • Let cool completely before slicing.
